This soup is a favorite in my kitchen because it tastes just like a classic stuffed pepper but without the effort of stuffing and baking individual peppers. It is the perfect meal for a chilly evening when you want something filling and healthy for the whole family.

My top tip is to use a good quality beef broth to give the soup a deep, savory flavor base. If you like things a little spicy, you can stir in a pinch of red pepper flakes right at the end.

🧺 Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 can diced tomatoes, 14 ounces
  • 1 can tomato sauce, 15 ounces
  • 4 cups beef broth
  • 1 cup cooked white rice
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

    Heat the olive oil in a large pot over medium heat and add the ground beef and diced onion.

    Cook until the beef is browned and the onion is soft, then drain any excess grease.

    Add the garlic, green bell pepper, and red bell pepper to the pot and cook for another three minutes.

    Stir in the diced tomatoes, tomato sauce, beef broth, oregano, salt, and pepper.

    Bring the soup to a boil, then turn the heat down low and let it simmer for about 20 minutes.

💡 Tips

Store your leftovers in an airtight container in the fridge for up to three days. You can serve this with a sprinkle of shredded cheddar cheese or a dollop of sour cream on top. If the soup gets too thick after sitting, just add a splash of water or broth when you reheat it.
