Hearty Grinder Bean Salad
A filling, protein packed salad that captures all the savory goodness of a grinder sandwich without the bread.
recipesbynani.comIf you love a good deli sandwich but want something a bit lighter and easier to meal prep, this bean salad is exactly what you need. It brings together salty salami, creamy beans, and plenty of crunchy fresh vegetables to keep you satisfied through the afternoon.
My biggest tip for this one is to chop everything into small, uniform pieces. When the salami, peppers, and beans are all about the same size, you get a little bit of every delicious flavor in every single bite.
🧺 Ingredients
- 2 cans chickpeas, rinsed and drained
- 1 can white kidney beans, rinsed and drained
- 4 ounces salami, diced
- 1 cup cherry tomatoes, quartered
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup pepperoncini, chopped
- 1/2 cup fresh parsley, chopped
- 1/4 cup olive oil
- 3 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and black pepper to taste
👩🍳Instructions
- 1
Place the drained chickpeas and white beans into a large mixing bowl.
- 2
Add the diced salami, tomatoes, cucumber, onion, pepperoncini, and fresh parsley to the beans.
- 3
In a small jar or bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper until well combined.
- 4
Pour the dressing over the salad and toss everything together until the ingredients are evenly coated.
- 5
Let the salad sit in the refrigerator for at least thirty minutes before serving so the flavors have a chance to meld together.
💡 Tips
This salad tastes even better the next day after the flavors sit in the fridge. Store it in an airtight container for up to three days. It makes a wonderful lunch on its own or a quick side dish for dinner.
