This salad is one of my favorite ways to enjoy spring roll flavors without having to wrap anything by hand. It is light, refreshing, and full of colorful textures that make every bite feel like a treat.

I love serving this on warmer days when I want something crisp but satisfying. If you have extra time, try to slice your vegetables into very thin matchsticks so you get a little bit of everything in every forkful.

๐Ÿงบ Ingredients

  • 8 ounces rice vermicelli noodles
  • 2 cups shredded purple cabbage
  • 1 large carrot, julienned
  • 1 ripe mango, peeled and cubed
  • 1 cup cucumber, sliced into thin strips
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup fresh mint leaves
  • 1/4 cup chopped roasted peanuts
  • 1/3 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 2 tablespoons warm water

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Cook the rice noodles according to the package directions, then rinse them under cold water and drain well.

  2. 2

In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, lime juice, and warm water until the dressing is smooth.

  3. 3

Place the cooked noodles in a large serving bowl.

  4. 4

Top the noodles with the shredded cabbage, carrot, mango, cucumber, cilantro, and mint.

  5. 5

Drizzle the peanut dressing over the salad just before serving.

  6. 6

Toss everything together gently and garnish with the chopped peanuts.

๐Ÿ’ก Tips

Store the dressing separately from the salad if you plan on having leftovers to keep the vegetables crisp. You can add grilled shrimp or tofu if you want to make this a heartier main course.
