There is something so special about transforming simple carrots into beautiful ribbons. This salad is always a hit at my table because it feels light yet has plenty of crunch and flavor to keep everyone coming back for seconds.

My best tip is to use a vegetable peeler to get those nice thin strips. If you have time, let the salad sit for ten minutes before serving so the carrots soften up just a little bit in the dressing.

🧺 Ingredients

  • 4 large carrots
  • 1/3 cup shelled pistachios, roughly chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon honey
  • Salt and black pepper to taste

    Wash and peel the carrots, then continue using your peeler to shave the carrots into long, thin ribbons.

    Place the carrot ribbons in a large mixing bowl.

    In a small jar or bowl, whisk together the olive oil, lemon juice, Dijon mustard, and honey until smooth.

    Pour the dressing over the carrots and toss gently to coat them well.

💡 Tips

This salad tastes best when eaten fresh, but you can keep leftovers in an airtight container in the fridge for a day. Try adding some crumbled feta cheese or dried cranberries if you want an extra pop of flavor.
