Late summer is truly the best time of year for produce. Everything is ripe, sweet, and bursting with flavor, making it the perfect time to pull together a simple salad that highlights these seasonal treasures.

My favorite thing about this dish is how flexible it is. If you have some extra garden herbs or a different variety of tomato on hand, feel free to toss those in as well for a little extra color.

🧺 Ingredients

  • 2 large ripe tomatoes, chopped
  • 1 cup sweet corn kernels, fresh or grilled
  • 2 ripe peaches, pitted and sliced
  • 1 small red onion, thinly sliced
  • 1/4 cup fresh basil leaves, torn
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and black pepper to taste

    Place the chopped tomatoes, corn, sliced peaches, and red onion into a large serving bowl.

    Gently toss the ingredients together so they are well mixed but the peaches stay intact.

    Drizzle the olive oil and balsamic vinegar over the top of the salad.

    Add the fresh basil leaves and season with a pinch of salt and pepper.

💡 Tips

Store any leftovers in an airtight container in the fridge for up to one day. I love serving this alongside grilled chicken or fish for a complete summer meal.
