There is something so satisfying about a quick stir fry when you need a healthy meal in a hurry. This recipe uses a colorful mix of broccoli, carrots, and peppers to create a dish that is as beautiful as it is delicious.

I love keeping this recipe simple, but it is very easy to customize based on what you have in your fridge. If you want to make it a hearty dinner, serve the vegetables over a bowl of steamed jasmine rice with your favorite protein on the side.

🧺 Ingredients

  • 2 cups broccoli florets
  • 1 large carrot, sliced into thin coins
  • 1 red bell pepper, chopped
  • 1 red onion, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 teaspoon minced garlic
  • 1 teaspoon minced fresh ginger
  • 1 tablespoon toasted sesame seeds
  • 1 sliced green onion

👩‍🍳Instructions

  1. 1

Heat the vegetable oil in a large skillet or wok over medium high heat.

  2. 2

Add the broccoli, carrots, bell pepper, and red onion to the pan.

  3. 3

Stir fry the vegetables for about five to seven minutes until they are tender yet still have a nice crunch.

  4. 4

Stir in the garlic and ginger, cooking for just one minute until fragrant.

  5. 5

Pour the soy sauce and sesame oil over the vegetables and toss everything together to coat well.

  6. 6

Remove from the heat and garnish with sesame seeds and green onions before serving.

💡 Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can easily add extra protein like tofu, chicken, or shrimp to make this a more filling meal.
