My family loves this recipe because it feels like a treat without the heavy mess of traditional tacos. If you have any extra vegetables in the fridge, feel free to toss them into the skillet for a little extra nutrition.

🧺 Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 packet taco seasoning
  • 2 cups cooked white or brown rice
  • 1 can black beans, rinsed and drained
  • 1 cup shredded cheddar cheese
  • 1 cup salsa
  • 1 avocado, diced
  • 1/2 cup sour cream or Greek yogurt
  • Fresh cilantro for garnish
