Easy Strawberry Pie

- 5 tablespoons sugar
- 7 tablespoons salted butter, melted
- 1/2 cup sugar (use 3/4 cup if berries are less sweet)
- 2 tablespoons cornstarch
- 1 1/2 cups cold water
- 3 ounces strawberry Jell O powder
- 4 to 5 cups fresh strawberries, hulled and halved if large
- 3/4 cup heavy cream
- 4 ounces cream cheese, softened
- 1/4 cup maple syrup

Preheat your oven to 350 degrees.

Combine the graham cracker crumbs, 5 tablespoons of sugar, and melted butter. Press this mixture firmly into a 9 inch pie plate and bake for 10 minutes, then let it cool.

In a small saucepan, whisk together the sugar, cornstarch, and cold water. Cook over medium low heat, stirring constantly, until the mixture thickens and begins to bubble.

Continue cooking for two more minutes, then stir in the strawberry Jell O powder until fully dissolved. Remove from heat and let it cool slightly.

Place half of the fresh strawberries into the cooled crust. Drizzle some of the Jell O mixture over the berries, then layer the remaining berries on top and coat them with the rest of the mixture.

Refrigerate the pie for 4 to 6 hours until it is fully set.

To make the topping, beat the heavy cream in a bowl until soft peaks form. In a separate bowl, beat the softened cream cheese and maple syrup until smooth, then gently fold this into the whipped cream.
