Easy Mini Grilled Cheese Bites
These bite sized grilled cheese sandwiches are the perfect companion for your favorite bowl of tomato soup.
recipesbynani.comThere is nothing quite like a warm bowl of soup paired with a crispy grilled cheese sandwich. These mini versions are so simple to make because you bake them all at once on a sheet pan instead of standing over the stove flipping each one individually.
My favorite trick for the best crunch is to make sure you butter both sides of the bread really well. These are always a hit with the kids and make lunch feel extra special.
🧺 Ingredients
- 8 slices of white or sourdough bread
- 4 tablespoons salted butter, softened
- 8 slices of mild cheddar or American cheese
👩🍳Instructions
- 1
Preheat your oven to 400 degrees Fahrenheit.
- 2
Butter one side of every slice of bread.
- 3
Place four slices of bread, butter side down, on a baking sheet.
- 4
Top each slice with two pieces of cheese and cover with the remaining bread slices, butter side up.
- 5
Bake for about 10 minutes or until the bread is golden brown and the cheese is melted.
- 6
Remove from the oven and carefully cut each sandwich into four smaller squares.
- 7
Serve warm alongside your favorite soup.
💡 Tips
These are best served fresh while the cheese is still gooey. If you have leftovers, store them in an airtight container and reheat them in a toaster oven to keep the bread crisp.
