Easy Ground Beef Fajita Bowls
These flavorful bowls are a quick and budget friendly way to enjoy all the goodness of fajitas for dinner.
recipesbynani.comFajita bowls are a favorite in my house because they come together so fast. Using ground beef instead of steak makes the meal much more affordable, and you do not even need to spend time marinating the meat.
I love to use leftover jasmine rice to make this dinner even quicker. If you have a rice cooker, go ahead and make a big batch at the start of the week so you can whip these up whenever you need a hearty meal.

- 1 pound ground beef
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 2 cups cooked jasmine rice
- 1 large bell pepper, sliced
- 1/2 yellow onion, sliced
- 1 cup canned or frozen corn
- 1 avocado, sliced
- 1 lime, cut into wedges
- Fresh cilantro for garnish

Heat a large skillet over medium high heat and add the ground beef.

Cook the beef until it is browned, then drain off any excess fat.

Stir in the chili powder, cumin, paprika, garlic powder, salt, and pepper until the meat is well coated.

Remove the beef from the skillet and set it aside.

In the same skillet, add the sliced bell peppers and onions. Sauté them for about 5 minutes until they are tender and slightly charred.

Add the corn to the skillet with the vegetables and cook for another 2 minutes.

Divide the cooked jasmine rice among four bowls.

Top each bowl with a portion of the seasoned ground beef, the sautéed vegetables, and a few slices of fresh avocado.

Squeeze fresh lime juice over each bowl and top with a sprinkle of cilantro before serving.
💡 Tips
You can store the beef and veggie mixture in an airtight container in the fridge for up to 3 days. Wait to add the avocado until right before you eat to keep it from browning. These bowls are great for meal prep if you keep the rice and toppings in separate containers.
