There is something so satisfying about a bowl packed with seasoned chicken, fluffy couscous, and crisp veggies. This meal has become a staple at my house because it feels like a treat but is simple enough for a busy weeknight. Everyone loves picking their favorite toppings to customize their own plate.

My secret for the best chicken is to make sure you let the marinade sit for at least thirty minutes before cooking. If you want a little extra zing, add a squeeze of fresh lemon juice over the finished bowl right before you serve it.

🧺 Ingredients

  • 1 pound chicken breast, cut into small cubes
  • 2 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup dry couscous
  • 1 1/4 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup tzatziki sauce
  • 1/4 cup crumbled feta cheese

    Preheat your oven to 400 degrees Fahrenheit.

    In a medium bowl, toss the chicken cubes with olive oil, oregano, garlic powder, onion powder, salt, and pepper until well coated.

    Spread the chicken on a parchment lined baking sheet and bake for 15 to 20 minutes, or until the chicken is cooked through and lightly browned.

    While the chicken bakes, prepare the couscous by bringing the chicken broth to a boil in a small pot. Stir in the couscous, cover with a lid, and remove from the heat. Let it sit for 5 minutes then fluff with a fork.

    Assemble the bowls by spooning a generous portion of couscous into each bowl, topping with the baked chicken, the fresh vegetable salad, a scoop of tzatziki, and a sprinkle of feta cheese.

💡 Tips

Store the chicken and couscous in separate containers in the fridge for up to three days to keep everything fresh. If you want to make this ahead of time, keep the veggie salad separate from the hot ingredients until you are ready to eat.
