Easy Chicken and Zucchini Stir Fry

- 2 medium zucchinis, sliced into half moons
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1/4 cup soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- Cooked white rice or noodles for serving

Whisk the soy sauce, brown sugar, sesame oil, and cornstarch mixture together in a small bowl and set it aside.

Heat one tablespoon of oil in a large skillet or wok over medium high heat.

Add the remaining tablespoon of oil to the same pan and toss in the zucchini slices.
