There is something so comforting about a big bowl filled with bright, fresh ingredients. My family loves these shawarma bowls because the tofu gets perfectly crispy and carries all those warm, aromatic spices so well.

I like to prep my veggies ahead of time so I can just assemble everything when I get home from a long day. If you want even more texture, try adding a handful of toasted chickpeas or some fresh parsley on top.

🧺 Ingredients

  • 1 block extra firm tofu, pressed and cubed
  • 2 tablespoons olive oil
  • 1 tablespoon shawarma spice blend
  • 2 cups cooked basmati rice
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup pickled red onions
  • 1/4 cup creamy tahini
  • 1 tablespoon lemon juice
  • 2 tablespoons water
  • Salt and pepper to taste

    Preheat your oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.

    Toss the cubed tofu in a bowl with the olive oil and shawarma spice blend until every piece is well coated.

    Spread the tofu in a single layer on the baking sheet and bake for 25 to 30 minutes, turning halfway through, until the edges are golden and crispy.

    While the tofu bakes, whisk the tahini, lemon juice, and water in a small bowl until smooth. Add a little more water if you prefer a thinner sauce.

    Assemble the bowls by dividing the warm basmati rice into bowls and topping with the crispy tofu, cucumbers, tomatoes, and pickled onions.

    Drizzle the tahini sauce over the top and serve immediately.

💡 Tips

Store the tofu and rice separately from the fresh vegetables to keep everything crisp. The tahini sauce will keep in the fridge for up to three days in an airtight container.
