There is something so special about a warm bowl of creamy soup after a long day. This white chicken lasagna soup captures all the cozy flavors of your favorite cheesy pasta dish without all the time spent layering noodles in a pan.

My family loves this recipe because it is hearty and satisfying. If you want a little extra texture, try topping your bowl with a handful of fresh spinach or a little sprinkle of red pepper flakes for heat.

🧺 Ingredients

  • 2 tablespoons butter
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups shredded cooked chicken
  • 6 cups chicken broth
  • 8 ounces lasagna noodles, broken into pieces
  • 1/2 cup heavy cream
  • 8 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste

👩‍🍳Instructions

  1. 1

Melt the butter in a large pot over medium heat and add the diced onion. Cook until the onion is soft and translucent.

  2. 2

Stir in the minced garlic and cook for about one minute until it smells fragrant.

  3. 3

Pour in the chicken broth and add the dried Italian seasoning. Bring the liquid to a gentle boil.

  4. 4

Add the broken lasagna noodles to the pot and cook for about 8 to 10 minutes until they are tender.

  5. 5

Stir in the shredded chicken and reduce the heat to low.

  6. 6

Add the cream cheese and heavy cream. Whisk gently until the cream cheese is fully melted and the soup is smooth.

  7. 7

Stir in the mozzarella and parmesan cheeses until they are melted and combined.

  8. 8

Season the soup with salt and pepper to your liking and serve while warm.

💡 Tips

Store any leftovers in an airtight container in the fridge for up to three days. Since the noodles soak up the broth over time, you might need to add a splash of extra chicken broth when reheating on the stove.
