Creamy Thai Chicken Soup

This Thai style soup is one of my favorite go to recipes because it packs so much flavor into a single pot. You get the perfect balance of creamy coconut milk, zesty lime, and a gentle heat from the red curry paste.
My best tip for this recipe is to make sure you have all your ingredients chopped and ready to go before you start cooking. Because this soup comes together fast, you will want your chicken, veggies, and aromatics prepped and waiting by the stove.

- 1 tablespoon vegetable oil
- 1 pound chicken breast, thinly sliced
- 2 tablespoons red curry paste
- 1 tablespoon fresh ginger, minced
- 2 cloves garlic, minced
- 1 can full fat coconut milk
- 3 cups chicken broth
- 1 red bell pepper, sliced
- 4 ounces dried rice noodles
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- Fresh cilantro for garnish

Heat the vegetable oil in a large pot over medium heat.

Add the chicken slices to the pot and cook until they are no longer pink, then remove them and set aside.

Store any leftovers in an airtight container in the fridge for up to three days. Keep in mind that the noodles will soak up some of the broth, so you might want to add a splash of extra water or broth when you reheat it. This soup tastes great served with an extra wedge of lime on the side.
