There is nothing quite like coming home to a cozy bowl of soup when the air turns crisp. This butternut squash soup is one of my absolute favorites because it feels so elegant yet is actually quite simple to put together. Everyone I share it with always asks for the recipe.

My secret for the best flavor is roasting the squash until the edges turn a beautiful golden brown before blending. It adds a natural sweetness that you just cannot get from boiling the vegetables. Make sure to use a good quality vegetable broth to keep the flavors bright.

🧺 Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 1 large yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 teaspoon ground nutmeg
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream
  • Salt and black pepper to taste
