There is something so special about a warm bowl of creamy chicken soup, especially when it is loaded with bright sun dried tomatoes and fresh kale. This recipe is a favorite in my kitchen because it feels fancy enough for guests but is easy enough to whip up on a busy weeknight.

My best tip for this recipe is to use a rotisserie chicken if you are short on time. It adds plenty of flavor and saves you a good chunk of preparation so you can get dinner on the table faster.

🧺 Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breasts, diced
  • 1 onion, finely diced
  • 3 cloves garlic, minced
  • 1/2 cup sun dried tomatoes, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 8 ounces pasta of your choice
  • 2 cups chopped kale
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

    Heat the olive oil in a large pot over medium heat.

    Add the diced chicken and cook until browned on all sides, then remove the chicken from the pot.

    Add the onion to the same pot and cook until it is soft and translucent.

    Stir in the garlic, sun dried tomatoes, oregano, and red pepper flakes, cooking for one minute until fragrant.

    Pour in the chicken broth and bring the mixture to a gentle simmer.

    Add the pasta and cook until it is nearly tender.

    Stir in the heavy cream, the cooked chicken, and the kale.

    Simmer everything together for about five minutes until the chicken is cooked through and the kale is wilted.

    Remove from the heat and stir in the Parmesan cheese, adding salt and pepper to taste.

💡 Tips

Store any leftovers in an airtight container in the fridge for up to three days. If the soup gets too thick in the fridge, just add a small splash of broth or water when you reheat it on the stove.
