Creamy Lemon Shrimp Pasta
A bright and zesty shrimp pasta dish that comes together in just a few minutes for a perfect weeknight dinner.
recipesbynani.comThere is nothing quite like a big bowl of pasta to bring the family together at the end of a long day. This lemon shrimp pasta is one of my absolute favorites because it feels fancy enough for guests but is simple enough to whip up on a busy Tuesday evening. The sauce is light and fresh, yet satisfies those creamy cravings we all have sometimes.
My best tip for this recipe is to make sure you have all your ingredients chopped and ready to go before you turn on the stove. Because the shrimp cooks so quickly, you will want everything nearby so you can keep the pasta perfectly al dente and the sauce silky smooth.
🧺 Ingredients
- 8 ounces spaghetti
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 cup dry white wine
- 1/2 cup heavy cream
- 1/4 cup freshly grated Parmesan cheese
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons fresh parsley, chopped
- Salt and black pepper to taste
👩🍳Instructions
- 1
Bring a large pot of salted water to a boil and cook the spaghetti according to the package instructions until it is al dente.
- 2
While the pasta cooks, heat the olive oil in a large skillet over medium heat.
- 3
Season the shrimp with salt and pepper, then add them to the skillet and cook for about 2 minutes per side until they are pink and cooked through. Remove the shrimp from the pan and set them aside.
- 4
In the same skillet, add the minced garlic and cook for about 30 seconds until it is fragrant.
- 5
Pour in the white wine and let it simmer for 2 minutes to reduce the liquid slightly.
- 6
Lower the heat and stir in the heavy cream, Parmesan cheese, lemon juice, and lemon zest. Stir until the sauce is smooth and slightly thickened.
- 7
Return the cooked shrimp to the skillet and add the drained pasta.
- 8
Toss everything together until the pasta is well coated in the sauce. Garnish with fresh parsley before serving.
💡 Tips
This dish is best enjoyed immediately while the sauce is creamy. If you have leftovers, store them in an airtight container in the fridge for up to two days and add a small splash of water when reheating to loosen up the sauce. Serve this with a side of crusty bread to soak up the extra lemon garlic sauce.
