Creamy Crockpot Tortellini Soup

My secret to the best flavor is browning the sausage before adding it to the pot. It adds a lovely depth to the broth that pairs perfectly with the tender pasta. Just be sure to stir in your spinach at the very end so it stays bright and fresh.

- 1 small onion, diced
- 3 cloves garlic, minced
- 2 cans diced tomatoes, 14.5 ounces each
- 4 cups chicken broth
- 1 teaspoon dried Italian seasoning
- 1 package refrigerated cheese tortellini, 20 ounces
- 2 cups fresh baby spinach
- 1/2 cup heavy cream
- Salt and pepper to taste
