  • 1 pound chicken breast, cut into bite sized pieces
  • 2 medium zucchini, sliced into half moons
  • 1 can full fat coconut milk
  • 2 tablespoons butter
  • 1 tablespoon chili powder
  • 1 teaspoon ground ginger
  • 1 teaspoon garlic powder
  • 1 tablespoon vegetable oil
  • Salt and black pepper to taste
  • Fresh cilantro for garnish

💡 Tips

Serve this over a bed of steamed basmati rice or cauliflower rice to soak up the creamy sauce. If you have leftovers, keep them in an airtight container in the fridge for up to three days. You can reheat it gently on the stovetop with a splash of water if the sauce gets too thick.
