There is nothing quite like the abundance of summer zucchini. Whenever my garden starts producing more than we can eat, I love turning to this gratin because it is so comforting and simple to put together for a family dinner.

The secret to this dish is the golden breadcrumb topping that adds a nice crunch to the creamy, melted cheese sauce. If you want a little extra flavor, feel free to add a pinch of fresh thyme or oregano from your herb garden before popping it into the oven.

🧺 Ingredients

  • 4 medium zucchini, sliced into thin rounds
  • 2 tablespoons butter
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated parmesan cheese
  • 1/2 cup panko breadcrumbs
  • Salt and black pepper to taste

    Preheat your oven to 375 degrees Fahrenheit and lightly grease a medium baking dish.

    Melt the butter in a large skillet over medium heat.

    Add the onion and garlic to the skillet, cooking until they are soft and fragrant.

    Add the zucchini slices to the skillet and cook for about 5 minutes until they begin to soften.

    Pour in the heavy cream and half of the cheddar cheese, stirring until the cheese melts and the sauce thickens slightly.

💡 Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can reheat individual portions in the microwave or place them back in the oven for a few minutes to crisp up the breadcrumbs again.
