This creamy Boursin pasta is a staple in my kitchen when I need something delicious on the table in a hurry. The herb and garlic cheese creates a silky sauce that coats the noodles perfectly, while the tomatoes add a nice pop of sweetness.

I love tossing in a handful of fresh spinach right at the end to add some greens to the meal. It is a foolproof dinner that always feels like a treat, even on the busiest weeknights.

🧺 Ingredients

  • 12 ounces of your favorite pasta
  • 1 container of Boursin herb and garlic cheese
  • 2 cups cherry tomatoes
  • 3 cups fresh baby spinach
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • 1/4 cup pasta water, reserved from boiling

    Bring a large pot of salted water to a boil and cook the pasta according to the package directions.

    While the pasta cooks, heat the olive oil in a large skillet over medium heat.

    Add the cherry tomatoes to the skillet and cook them until they begin to soften and burst, which takes about 5 minutes.

    Scoop out a little bit of the pasta water, then drain the rest of the noodles.

    Add the block of Boursin cheese and the reserved pasta water to the skillet with the tomatoes.

    Add the cooked pasta and the fresh spinach to the skillet.

    Toss everything together until the spinach is wilted and the pasta is well coated in the sauce, then season with salt and pepper to taste.

💡 Tips

Store any leftovers in an airtight container in the fridge for up to two days. If the sauce thickens too much once chilled, just add a tiny splash of water or milk when reheating it on the stove. This pairs beautifully with a simple side salad or a piece of crusty bread.
