There is something so satisfying about a hot, cheesy quesadilla for dinner. This recipe is a favorite in my house because the cool ranch sauce balances out the spicy buffalo chicken perfectly, making every bite feel like a treat.

You can easily adjust the heat level to suit your family by adding more or less buffalo sauce. It is a quick meal that brings a little bit of fun to the dinner table on a busy weeknight.

🧺 Ingredients

  • 2 cups cooked chicken, shredded
  • 6 slices bacon, cooked and crumbled
  • 1 cup sweet corn kernels
  • 2 cups shredded cheddar or Monterey Jack cheese
  • 4 large flour tortillas
  • 1/2 cup sour cream
  • 1/4 cup buttermilk
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon garlic powder
  • 1/4 cup buffalo wing sauce
  • 1 cup chopped lettuce for serving

    Whisk the sour cream, buttermilk, parsley, dill, and garlic powder in a small bowl to create your homemade cool ranch sauce.

    In a separate bowl, toss the shredded chicken with the buffalo wing sauce until well coated.

    Heat a large skillet or griddle over medium heat.

    Place a tortilla in the skillet and sprinkle a layer of cheese over one half.

    Top the cheese with the buffalo chicken, bacon pieces, and corn.

    Drizzle a little of the ranch sauce over the filling and fold the tortilla in half.

💡 Tips

These are best served right away while the cheese is gooey. If you have leftovers, keep them in the fridge and reheat them in a dry skillet to get the crunch back in the tortilla.
