Comforting Zucchini and Beef Casserole

This dish is one of my favorites because it hides plenty of fresh vegetables inside a savory mix of ground beef and melted cheese. It is a wonderful way to use up extra zucchini during the summer harvest.
My top tip for this recipe is to take a few extra minutes to sauté the zucchini before adding it to the pan. This simple step removes excess moisture so your dinner turns out perfectly cooked rather than soupy. It makes all the difference for a better texture.

- 2 pounds zucchini, diced
- 1 pound lean ground beef
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 15 ounces tomato sauce
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups shredded Italian cheese blend

Preheat your oven to 375 degrees Fahrenheit and lightly grease a 9x13 inch baking dish.

Heat a large skillet over medium heat and sauté the diced zucchini until it is just tender, then remove it from the skillet and set aside.

In the same skillet, cook the ground beef and chopped onion together until the meat is browned and the onions are soft.
