There is nothing quite like the taste of a fresh tomato sandwich on a warm afternoon. It is one of those meals that relies entirely on using the best ingredients you can find, specifically a perfectly ripe tomato that is bursting with flavor.

My secret to taking this sandwich to the next level is the homemade basil mayo. It adds a lovely herbal brightness that makes the simple white bread and juicy tomato feel like a special treat. I suggest using a sturdy soft white bread so it holds up to all those delicious juices.

🧺 Ingredients

  • 2 thick slices of soft white bread
  • 1 large ripe tomato, sliced into thick rounds
  • 2 tablespoons mayonnaise
  • 4 fresh basil leaves, finely chopped
  • 1 pinch of flaky sea salt
  • 1 pinch of freshly cracked black pepper
  • 1 teaspoon butter, softened

    In a small bowl, mix the mayonnaise with the chopped fresh basil until well combined.

    Lightly butter one side of each slice of bread if you prefer your sandwich toasted, otherwise leave them soft.

    Spread a generous amount of the basil mayo on the inside of both slices of bread.

    Layer the thick tomato slices onto the bottom piece of bread.

    Sprinkle the tomato slices with sea salt and black pepper to draw out the sweetness.

    Place the second slice of bread on top and press down very gently before slicing the sandwich in half.

💡 Tips

Eat this sandwich immediately after assembling so the bread does not get too soggy. If you want a little extra crunch, you can lightly toast the bread before adding your mayo. Store any leftover basil mayo in a small jar in the fridge for up to three days.
