Classic Philly Cheesesteak

My best tip for success is to put your beef in the freezer for about twenty minutes before you start slicing. It makes it so much easier to get those paper thin strips that cook up perfectly tender.

- 1 pound ribeye or sirloin steak, thinly sliced
- 2 tablespoons vegetable oil
- 1 large yellow onion, thinly sliced
- 1 green bell pepper, thinly sliced
- 4 hoagie rolls
- 8 slices provolone cheese
- Salt and black pepper to taste

Heat one tablespoon of oil in a large skillet or griddle over medium high heat.

Add the sliced onions and peppers to the skillet and cook until they are soft and golden brown, then remove them from the pan.

Add the remaining oil to the same skillet and add the thinly sliced beef in a single layer.

Season the beef with salt and pepper and sear it until it is browned and cooked through.

Move the cooked beef to one side of the skillet and add the cooked onions and peppers back in.

Divide the mixture into four piles and top each pile with two slices of provolone cheese.

Let the cheese melt over the beef and vegetables while you toast the inside of your hoagie rolls.

Slide a spatula under each pile of cheesy meat and vegetables and tuck them into the toasted rolls to serve.

Serve these right away while the cheese is nice and melty. If you have leftovers, keep the meat and vegetables in the fridge and toast a fresh bun when you are ready to eat again.
