Classic Peanut Butter Scotcheroos

My favorite trick for getting these perfect every time is to press the cereal mixture firmly into the pan so the bars stay together when you slice them. Just be patient while the topping sets so you get that lovely snap when you take a bite.

- 1 cup light corn syrup
- 1 cup creamy peanut butter
- 6 cups crispy rice cereal
- 1 cup semi sweet chocolate chips
- 1 cup butterscotch chips

Prepare a 9 by 13 inch baking pan by lightly greasing it with butter or cooking spray.

In a large pot, combine the sugar and corn syrup over medium heat. Stir until the sugar dissolves and the mixture begins to boil.

Add the crispy rice cereal to the pot and stir until it is evenly coated in the peanut butter mixture.

Press the cereal mixture into your prepared baking pan using a spatula or greased hands.

Place the chocolate chips and butterscotch chips in a microwave safe bowl. Heat in thirty second intervals, stirring in between, until the mixture is completely smooth.

Store these in an airtight container at room temperature to keep them soft and chewy. If your house gets very warm, you can keep them in the refrigerator, but let them sit on the counter for a few minutes before eating.
