This casserole is one of my favorite go to meals when the week gets busy. It is the ultimate comfort food because it combines savory ground beef and veggies with that signature golden crunch of baked tater tots.

My best tip for this recipe is to make sure your beef is well browned before adding the sauce. It really helps bring out the best flavor in the meat so every bite is delicious.

🧺 Ingredients

  • 1 pound lean ground beef
  • 1 small onion, diced
  • 1 can condensed cream of mushroom soup
  • 1 cup frozen mixed vegetables, thawed
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 bag frozen tater tots

    Preheat your oven to 375 degrees Fahrenheit.

    In a large skillet over medium heat, cook the ground beef and onion together until the meat is browned and the onion is soft.

    Drain any excess grease from the skillet.

    Stir in the condensed mushroom soup, frozen vegetables, garlic powder, salt, and pepper until everything is well combined.

    Pour the beef mixture into a 9 by 13 inch casserole dish and spread it out evenly.

    Sprinkle the shredded cheddar cheese over the beef mixture.

    Arrange the frozen tater tots in an even layer on top of the cheese.

    Bake for 30 to 35 minutes or until the tater tots are golden brown and crispy.

💡 Tips

Serve this dish alongside a fresh garden salad or some simple steamed green beans. If you have any leftovers, you can store them in an airtight container in the fridge for up to 3 days and reheat them in the oven to keep the tots crunchy.
