Chewy Pumpkin Spice Cookies
These cookies are the perfect fall treat with a chewy texture and plenty of warm pumpkin flavor.
recipesbynani.comIf you love pumpkin season as much as I do, you need these cookies in your life. Most pumpkin cookies end up being a bit cakey, but these are wonderfully chewy with crispy edges. The secret is browning the butter and removing the excess water from the pumpkin puree before mixing it into the dough.
I love serving these alongside a hot cup of coffee on a chilly afternoon. Make sure to chill your dough properly, as it helps the flavors develop and keeps the cookies from spreading too much in the oven.
🧺 Ingredients
- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 1 teaspoon ground cinnamon
- 1 teaspoon pumpkin pie spice
- 1/4 teaspoon kosher salt
- 1/2 cup canned pumpkin puree
- 1 large egg yolk
- 1 teaspoon pure vanilla extract
- 1 1/2 cups all purpose flour
- 1/2 teaspoon baking soda
- 2 tablespoons granulated sugar for rolling
- 1 teaspoon ground cinnamon for rolling
- 1/2 teaspoon pumpkin pie spice for rolling
👩🍳Instructions
- 1
Melt the butter in a saucepan over medium heat until it foams and turns an amber color with a nutty scent, then remove from heat.
- 2
Stir the granulated sugar, brown sugar, cinnamon, pumpkin pie spice, and salt into the butter and let it cool for 10 minutes.
- 3
Place the pumpkin puree on a plate and press with paper towels until it reaches the consistency of frosting, then measure out 1/3 cup.
- 4
Whisk the egg yolk and vanilla into the cooled butter mixture, then stir in the blotted pumpkin.
- 5
Whisk the flour and baking soda in a separate bowl, then fold into the wet ingredients until just combined.
- 6
Cover the dough and refrigerate for at least one hour.
- 7
Mix the rolling sugars and spices in a small bowl, scoop the dough into balls, and roll them in the spiced sugar mixture.
- 8
Bake at 350 degrees F on a parchment lined sheet for 9 to 10 minutes.
- 9
Let them cool on the pan for 10 minutes before moving them to a wire rack.
💡 Tips
Store your cooled cookies in an airtight container at room temperature for up to three days. If you want them to stay soft, you can place a small piece of bread in the container with them.
