There is something so satisfying about a stuffed mushroom, especially when it is packed with melted cheese and tender chicken. This recipe is one of my favorite ways to turn leftover chicken into a meal that feels special without much effort at all.

I love these because they are naturally low in carbs but feel very filling. If you want a little extra color, try using both red and green bell peppers in the mixture. It is a simple dish that always hits the spot on a busy weeknight.

🧺 Ingredients

  • 4 large portobello mushroom caps, stems and gills removed
  • 1 cup cooked chicken, shredded or diced
  • 2 cups fresh baby spinach, chopped
  • 1/2 cup bell pepper, diced
  • 4 ounces cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

    Preheat your oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.

    Brush both sides of the cleaned mushroom caps with olive oil and place them gill side up on your baking sheet.

    In a mixing bowl, combine the shredded chicken, chopped spinach, diced bell peppers, softened cream cheese, half of the mozzarella, garlic powder, salt, and pepper.

    Spoon the chicken mixture evenly into each of the four mushroom caps.

    Top each mushroom with the remaining mozzarella and the grated parmesan cheese.

    Bake for 15 to 20 minutes until the mushrooms are tender and the cheese on top is bubbly and golden brown.

💡 Tips

These taste best right out of the oven. If you have leftovers, store them in an airtight container in the fridge for up to two days and reheat them in the oven or air fryer to keep the mushrooms from getting too soggy.
