Caramelized Chuck Roast

recipesbynani.comThere is nothing quite like a slow cooked roast to make the house smell wonderful. This recipe is a favorite in my kitchen because it is completely hands off and results in beef that is so tender it falls apart at the touch of a fork.
What makes this version special is the final step under the broiler. Instead of searing the meat beforehand, we add brown sugar at the very end to create a beautiful, caramelized crust that balances the savory juices perfectly. It is comfort food at its best.
🧺 Ingredients
- 3 to 4 pounds chuck roast
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 medium onion, sliced
- 1 cup beef broth
- 4 cloves garlic, minced
- 2 tablespoons Worcestershire sauce
- 1/4 cup brown sugar, divided

Preheat your oven to 325 degrees Fahrenheit.

Pat the chuck roast dry with paper towels, then season all sides with salt and pepper.

Place the sliced onion in the bottom of a large Dutch oven and set the roast on top of the onions.

In a small bowl, whisk together the beef broth, minced garlic, Worcestershire sauce, and half of the brown sugar. Pour this mixture over the roast.

Cover the pot and bake for 3.5 to 4 hours, or until the beef is very tender and shreds easily with a fork.

Remove the lid, shred the beef into smaller pieces, and discard any large fatty bits if desired.

Sprinkle the remaining brown sugar evenly over the shredded meat.

Switch your oven to broil and place the uncovered pot back inside for 2 to 3 minutes. Watch it very closely during this time so the sugar browns without burning.

Serve warm once the top is bubbly and caramelized.
💡 Tips
Store any leftovers in an airtight container in the refrigerator for up to 5 days. If you want to freeze the roast, let it cool completely and store it for up to 3 months. You can also prepare the meat a day in advance, then simply shred, add the final sprinkle of sugar, and broil right before you are ready to eat.
