Buffalo Chicken Tostada Stacks are a favorite in my house because they come together so quickly but taste like a treat from a restaurant. The crunch of the tostada shell paired with spicy chicken and melted cheese makes for a satisfying meal that everyone gets excited to eat.

For the best results, try to assemble these right before you serve them so the shells stay nice and crisp. If you like extra heat, feel free to add a few splashes of your favorite hot sauce on top of the finished stack.

🧺 Ingredients

  • 4 crispy corn tostada shells
  • 2 cups cooked chicken, shredded
  • 1/2 cup buffalo wing sauce
  • 1/4 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1 fresh jalapeño, thinly sliced
  • 2 tablespoons fresh cilantro, chopped

👩‍🍳Instructions

  1. 1

Preheat your oven to 375 degrees Fahrenheit.

  2. 2

In a medium bowl, toss the shredded chicken with the buffalo wing sauce until it is well coated.

  3. 3

Place the tostada shells on a large baking sheet.

  4. 4

Spread a small amount of ranch dressing onto each shell to act as a base.

  5. 5

Divide the buffalo chicken evenly among the four tostada shells.

  6. 6

Top each stack with a generous handful of both cheddar and pepper jack cheese.

  7. 7

Place the jalapeño slices on top of the cheese.

  8. 8

Bake for about 8 to 10 minutes or until the cheese is hot, bubbly, and melted.

  9. 9

Remove from the oven, sprinkle with fresh cilantro, and serve immediately.

💡 Tips

Store any leftover chicken in an airtight container in the fridge for up to three days. To keep your tostadas crunchy, store the shells separately from the chicken mixture and assemble them fresh when you are ready to eat.
