Broiled Salmon with Summer Fruit Salad
A fresh and simple salmon dinner paired with a bright fruit salad for a light summer meal.
recipesbynani.comThis broiled salmon is one of my favorite go to recipes when I want something healthy that does not take all night to prepare. It is light, flaky, and tastes just like summer on a plate.
The secret is the fruit salad on the side, which adds a lovely sweetness that pairs perfectly with the savory fish. My family loves how fast this comes together on a busy weeknight.
🧺 Ingredients
- 2 salmon fillets
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- Salt and black pepper to taste
- 1 cup diced strawberries
- 1 cup blueberries
- 1 cup diced peaches
- 1 tablespoon fresh mint, chopped
- Brown rice cakes for serving
👩🍳Instructions
- 1
Preheat your broiler to high.
- 2
Place the salmon fillets on a foil lined baking sheet.
- 3
Drizzle the salmon with olive oil and lemon juice, then sprinkle with a little salt and pepper.
- 4
Broil the salmon for 6 to 8 minutes until the top is golden and the fish flakes easily with a fork.
- 5
While the salmon cooks, combine the strawberries, blueberries, peaches, and mint in a medium bowl.
- 6
Serve the warm salmon alongside the chilled fruit salad and a side of brown rice cakes.
💡 Tips
Store any leftover salmon in an airtight container in the fridge for up to two days. The fruit salad is best eaten fresh, but you can keep it for a day if you wait to add the mint until just before serving.
