This broiled salmon is one of my favorite go to recipes when I want something healthy that does not take all night to prepare. It is light, flaky, and tastes just like summer on a plate.

The secret is the fruit salad on the side, which adds a lovely sweetness that pairs perfectly with the savory fish. My family loves how fast this comes together on a busy weeknight.

🧺 Ingredients

  • 2 salmon fillets
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • Salt and black pepper to taste
  • 1 cup diced strawberries
  • 1 cup blueberries
  • 1 cup diced peaches
  • 1 tablespoon fresh mint, chopped
  • Brown rice cakes for serving

    Preheat your broiler to high.

    Place the salmon fillets on a foil lined baking sheet.

    Drizzle the salmon with olive oil and lemon juice, then sprinkle with a little salt and pepper.

    While the salmon cooks, combine the strawberries, blueberries, peaches, and mint in a medium bowl.

💡 Tips

Store any leftover salmon in an airtight container in the fridge for up to two days. The fruit salad is best eaten fresh, but you can keep it for a day if you wait to add the mint until just before serving.
