There is something so comforting about a stack of warm pancakes on a weekend morning. These banana cottage cheese pancakes are a family favorite because they are simple to whip up in your blender and keep everyone full until lunch.

I love how the cottage cheese creates such a creamy texture without you ever tasting it directly. Just make sure to blend your batter until it is nice and smooth before you pour it onto the hot pan.

🧺 Ingredients

  • 1 cup old fashioned rolled oats
  • 1 cup cottage cheese
  • 1 ripe banana
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • A pinch of salt
  • Butter or oil for the pan
